Banana Muffins

Recipe from the Almost macrobiotic blog.

Ingredients

1/2 cup coconut oil, at room temperature, plus more for pan
1 tablespoon granulated sugar
2 large eggs
1 1/2 cups unbleached flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup mashed very ripe bananas (2 bananas)
1/2 cup applesauce (you could sub this with 2 more mashed bananas)
1/2 cup plain greek yogurt
1 teaspoon vanilla

Instructions

Preheat oven to 350 degrees. Cream coconut oil and sugar until light and fluffy. Add eggs, and beat to incorporate.
In a medium bowl, whisk together flour, baking soda, and salt. Add to the coconut oil mixture, and mix until just combined. Add bananas, applesauce, yogurt, vanilla, and cinnamon; mix to combine. Pour into greased (w/coconut oil) muffin tin.
Bake until a fork inserted into the center of a central muffin comes out clean, about 35 minutes (start checking on muffins after 25 min). Let rest in tin for 10 minutes, then turn out to cool.
