Sweet millet slices / Dolç de mill

1/2 cup millet, raisins (1/2 cup), sea salt, apple juice (1 & 1/4 cups), brown rice syrup, lemon juice (1 lemon), lemon zest of 1 lemon, agar flakes (2 tablespoons), kuzu (2 tablespoons)

1/2 tassa de mill,  panses de raïm (1/2 tassa), sal marina, suc de poma (1 i 1/4 tasses), xarop d’arròs integral, el suc d’una llimona i la seva ratlladura, flocs d’agar (2 cullerades ), kuzu (2 cullerades).


Bring 1 & 1/4 apple juice to the boil. Add millet & a pinch of salt and lower flame. Cook for 20 minutes. Spoon mixture into a baking mould.
Make the topping by bringing 2 cups of apple juice, lemon juice and raisins to the boil with 2 tablespoons of agar agar and a pinch of salt. Simmer until all agar dissolves. Add rice syrup to taste. Stir in kuzu by mixing in a little cold apple juice first and then adding to apple juice & agar mixture. Stir well for a few more minutes. Pour mixture over the millet base. Allow to cool and refrigerate until set. Sprinkle with ground almonds before serving.
